The fillets are delicately salted with salt from Bouin, in Vendée, near Noirmoutier.

We use beech wood for smoking, as well as, exceptionally, wood from fruit trees for even more subtle aromatic notes.
Each plate contains about ten slices of smoked trout, all you have to do is serve!
