In summer, we cooked our tomatoes in chutneys, more or less seasoned to satisfy all tastes.
Chutney, this sweet and sour condiment made from spicy fruits and vegetables (green tomatoes in our case), is a British specialty, brought to India by the colonists. 
It can be served as an accompaniment to fish, meat or even cheese.
Thanks to its long conservation (sugar & vinegar), the chutney can be eaten all year round,but it will go wonderfully with your foie gras for the holidays!
